If you are smart, you will make sure one of your best friends is a pastry chef. These little gems are baked by the fabulous Jeremy. And I think these may be my new favorites from his set of standards, although I still have hauntingly good memories of an angel food cake with a raspberry puree.
These are peanut butter and chocolate sandwich cookies. They're just a tiny bit bigger than a silver dollar and packed with yummy flavor. The cookies are perfect - outer tender hints of a crunchy outer coat yet chewy perfection when bit into. No crumbling or breaking, the cookies hold their shape and their creamy chocolate center with aplomb. The chocolate is not too sweet or too dominant a flavor, complimenting the peanut butter without overwhelming the tongue. Little bits of peanut add to the texture and fun, bringing the homemade taste right into the mouth.
